Ultrasonic slicing
SONIMAT provides an innovative ultrasonic food cutting technology: it ensures productivity gains and the optimal quality of food slicing.
Ultrasonic mechanical vibrations have a frequency above the hearing range of the human ear (greater than 16 kHz). These pressure waves are produced by a generator.
In an acoustic assembly, the generator converts the electrical frequency of the network (50/60 Hz) into high frequency electrical energy. Then, the piezoelectric converter (or transducer) transforms this electrical energy into mechanical vibrations of the same frequency. The booster, or amplitude amplifier, is used to increase or reduce the amplitude produced by the converter. It transmits the energy to the last element of the acoustic chain: the sonotrode.
The sonotrode, a titanium slicing blade, vibrates at high frequency. These vibrations create perfect slicing.
The ultrasonic vibration of the slicing guillotine facilitates food cutting because the blade penetrates the material without forcing or compressing it and prevents the products from sticking to the cutting tool.
Thus, ultrasonic slicing eliminates product losses and increases productivity. It ensures a better quality finish without sticking or clogging.
Ultrasonic cutting is particularly suitable for soft, frozen or fresh food products such as cheeses, meats, cold meats, pastries, pastries, etc. It is also suitable for all shapes and sizes: plates, pieces, strips, layers, rounds, blocks, bread and more.
